1 pound grass fed beef - (Gentz Longhorn Cattle)
1 clove garlic-chopped
1 eggplant-peeled and cubed
1 green pepper-chopped
2 cups of fresh tomatoes-chopped
1 cup tomato sauce
1 tsp. chopped oregano
1 tsp. chopped basil
salt and pepper to taste.
Top with Miabella goat feta optional
Brown beef and garlic. Add the eggplant; stir and cook 10 minutes. Add remaining ingredients, cover and simmer for 25 minutes stirring occasionally. Serve over rice or as is. May be made ahead and reheated.
